Spring in Ibiza: enjoy a mellow Balearic beat before the crowds arrive

Out of season, the island is more about natural charms than techno, but the sun still shines and the resident community keeps its unique spirit alive

Ibiza in the off-season. The big resort hotels are shuttered, the beach bars sealed up, the superclubs powered down until their showy reopening parties get the summer started again in late April. By July, the ratio will be back to 20 visitors to every one resident, but for now the island is as empty as it gets.

The sun is shining though, the air bright and warm, the sky a salted Balearic blue. And crowds still gather, here and there. At the Trotting Races, for example, in the Sant Rafael hippodrome in the centre of the island. A peculiar island tradition that supposedly began with charioteers during Ibiza’s Roman occupation, the sport requires jockeys to ride on little wheeled carts harnessed to horses that keep a briskish, semi-hurried pace, as if slightly late for an appointment. Kids and old boys seem to love it, the latter laying small bets on the races and dropping shots of brandy in their coffee. My horse, Maldiva des Puig, comes a distant third.

The city and the province of Jaén can be overlooked by tourists heading to nearby Granada or Córdoba. That’s a shame, given that they are filled with Renaissance architecture, including a magnificent cathedral, and renowned as one of the homes of olive oil. Thanks to its historic position between Christian Castilla and Muslim Granada, the city is surrounded by castles. I recommend staying at the Parador de Jaén. It sits at the top of the hill of Santa Catalina next to the castle, and the views from its rooms towards the Sierra Morena mountains are unparalleled.

Hiking in southern Italy: myths, mountains and wild boar in Cilento

South of the Amalfi Coast is a rugged wonderland of quiet paths through chestnut woods and vineyards. It’s all perfect for contemplating ancient yarns, spotting wildlife and enjoying local fare

In the silence of the chestnut woods, rays of sunlight ignite the patches of pink cyclamen and crocus. There are fungi of various kinds dotted around, including one that is a perfect sphere of bright orange pushing its way up out of earth. I sit on a rock and after a while I hear a gentle grunting noise, the sort of contented chunter made by a snorer having a light snooze. It’s not me. A pair of wild boar are approaching, moving through the shadows, noses down, short tails flicking continuously. It’s a mother and baby, so close I can see the dust on their backs. I move my hand towards the camera, but wily Old Ma spots the movement and they take off at a blistering pace, charging downhill, bristling with indignation.

I continue walking uphill, and after a mile or so stop at a paw print in a patch of mud. Large dog or wolf? There are no human boot marks that might accompany a canine. Nor is there anyone around to ask. Eventually, I reach a viewpoint on top of Monte Stella, the highest summit for many miles at 1,131 metres. Out west is the dark surface of the Tyrrhenian Sea where Odysseus reputedly battled his way home from Troy, narrowly surviving temptation by the dreaded Sirens at an island, Isola Licosa, just hidden from my view by the curve of the coastline. I can see as far as the distant ragged peninsula of Amalfi on the northern horizon but there are no ships in sight. I am alone.

I got lost in Morocco’s maze of medinas – and loved every minute

The medinas of Fez and Tétouan offer a welcome chance to ditch the GPS – and a return to random encounters

Somewhere between the coppersmiths and the woodcarvers, I achieve my goal. Mustapha, my guide, has stepped aside to buy some sweet pastries from a stall. (“You’ve got to try the kaab el ghazal, the ‘gazelle’s horns’. They’re really special.”) But there are some Gnawa musicians, with long black tassels on their hats rotating in time to their drums, and then I cannot resist looking at large copper pots, and the handmade kettles that lead on to brass antiques. I turn. What’s up here? A doorway and the clacking of a hand loom. As-salamu alaykum! Maybe I should head back? A man with a laden donkey bellows, “Balak!” Gangway! I take another turn. Hang on, I don’t recognise any of this.

At that moment, all the colours, tastes, sounds and sights are sprinkled with a magical leavening of adrenaline and the whole lot rises up like some delicious cake in the oven. I glance at the phone in my hand and make sure that location services have failed. It tells me nothing except that I am in Fez, a city of more than a million. The labyrinth has worked. I am lost.

An alpine winter feast: cheese, wine and a side dish of snowshoeing in France

A medieval Haute-Savoie village makes a great base for a gourmet break, with delicious comfort food and local wines. And the snowshoeing and skiing aren’t bad either, if you can drag yourself away from the table

The unmistakable whiff of cow – pungent, but not unpleasant – hit me as soon as I arrived at Ferme Dunoyer above the Haute-Savoie village of Samoëns. Rather than put me off, the scent heightened my appetite for the cheese blowout that was to come.

Sat at a wooden communal table inside the pine-walled restaurant run by the farm’s owner, Blandine Dunoyer, I waited for the bonanza of mountain comfort food: fondue savoyarde, tartiflette, raclette, then diots (smoked pork sausages) with polenta. Somehow, I found room for potée savoyarde, a rib-sticking dish of slow-cooked pork shoulder, cabbage and potatoes, then a round of top-notch alpine cheese, reblochon and tomme de savoie, before a creamy blueberry dessert.

‘Why don’t the inglesi come here any more?” The question was asked by a customer at Caffè Roma in the seaside town of Alassio, whose pre-second world war British population could reach 5,000.

There are several reasons, I think. From the late 19th century, wealthy Britons would arrive in October to escape the winter cold, stay until May, and then head home before the torrid Italian summer. These days, British people with that kind of wealth probably winter between Zermatt and the Caribbean. But neither has Alassio great appeal to more ordinary Britons wanting a summer holiday: August temperatures can hit the high 30s, crowds and prices surge and, as in so many Italian resorts, the sands are taken over by beach concessions from Easter to September.

In Melnik, Saint Trifon eclipses Saint Valentine as the town celebrates its long history of winemaking

The sun glows on the otherworldly shapes of the sandstone cliffs that have been sculpted by millennia of rain and left looking like someone tried to make sand castles but was too impatient to fill the bucket to the top. Jagged battlements and conical heaps stretch to the horizon.

At the base of these cliffs stands a cluster of large, elegant houses. This is Melnik, Bulgaria’s smallest town, with just 194 residents. Despite its diminutive size, the town is famous as the heart of Bulgaria’s wine region. Every year, on 14 February, thousands of visitors arrive for Saint Trifon’s Day, a celebration of the patron saint of winemaking, which is a much bigger deal than Valentine’s Day, and dates back centuries.

On board the maiden sleeper from Brussels to Venice: we got there in the end

Affordable couchettes, wonderful scenery and good company make up for the teething problems en route

At 6.45pm on Wednesday, the Good Night Train trundled out of platform 3 at Brussel-Zuid station. It departed 40 minutes late due to trespassers on the tracks, but the train soon picked up pace, the golden lights of the Belgian capital sweeping through the carriages where groups were stashing skis, families were settling young children and solo travellers stood at the open windows swapping names and stories amid the clamour and confusion on board. This was the inaugural European Sleeper service from Brussels to Venice … only the train wasn’t going to Venice.

Two days earlier, passengers had received an email explaining that the train would be running only as far as Verona, and that a regular Trenitalia service would take us on to Venice. Then, on the evening of departure, we learned that owing to unspecified Italian bureaucracy, the train wouldn’t enter Italy at all, but would be terminating at Innsbruck, with two connections taking us to Verona and then on to Venice.

A frozen, protected wonderland: slow adventure in the less visited French Alps

At the gateway to the Vanoise national park, new cabins make a great base for a wild winter retreat that’s laid-back but packed with activity

The snow is deep and soft as we pad slowly forward, a muffled crunching the only sound breaking the silence. All around us, the jagged peaks of the Vanoise massif pierce the sky, glinting in the clear morning light. As we walk, Matthieu, my snowshoeing guide, points out fresh tracks – mountain hare, roe deer, fox – and on the mountainside we spy ibex: first a lone male, then a group surveying us from on high.

Champagny-le-Haut, a 1,500-metre-high glacial valley in the French Alps close to the Italian border, is the gateway to the Vanoise national park. In summer it offers pristine mountain hikes and waterfalls, while in winter, with snow closing the road beyond the pretty hamlet of Le Bois where I’m staying, it’s a frozen, protected wonderland. A world away from the busy ski resorts elsewhere in La Plagne, it’s perfect for a more low-key, affordable winter holiday in the heart of nature.

It is still warm from deep frying and deliciously soft and sticky. I’m standing on an intersection between two cobbled medina streets in Tunis, capital of Tunisia, and Biles Elwadi, the sweet seller, is showing me how this national favourite is made. He rolls a sausage of the date and nut mixture into the semolina and cuts it into bite-size chunks to fry.

It’s my final day in Tunisia and, as Biles packages 10 dinars’ (£2.55) worth for me to take home, I realise I don’t want to leave just yet.

Kori Gassi Recipe - Mangalorean Traditional Chicken Curry With Coconut Milk

Kori Gassi Recipe  is a traditional Mangalorean chicken curry made with coconut milk. The delicious curry has a base of coconut and red chilli, an absolute classic from the coastal region of Mangalore. In Tulu language, Chicken is called Kori and Gassi is known as curry. This curry has a lovely blend of different fragrant spices, which is quite unique to Mangalorean cultural and heritage. 

Coconut plays an important part in Mangalorean cuisine and the main ingredient in the Kori Gassi is the coconut. The sweetness of the coconut milk balances the spicy flavours from the red chillies, peppercorns, cloves and the bitterness from the fenugreek seeds.Traditionally, Mangalorean Chicken Curry is served with Kori Rotti, a traditional and unique crispy flatbread made from rice flour, or Neer Dosa or just steamed rice.
