Hidden France: why I fell in love with peaceful, scenic Auvergne

From volcanoes to Vichy springs, this slice of dramatic rolling countryside below Burgundy is a revelation, complete with medieval villages and Michelin stars

The irony of visiting a 17th-century plague chapel in the midst of a 21st-century pandemic wasn’t lost on me when I donned my mask, sanitised my hands and stepped into the cool of a tiny church. It was built in 1628 so the afflicted could come and pray separately from the villagers of Saint-Haon-Le-Châtel, but if it served the same purpose for Covid-suffering villagers now, it was a relief to find it empty.

The same went for this area of the Auvergne: Le Roannais was peaceful and empty of tourists. And, as this summer will be the first foreign holiday for many after two years of limitations, it is the perfect place to get away from it all, especially of the lingering threat of Covid make crowds unpalatable.

Toffee banana recipe is a typical Asian sweet/ dessert. Banana slices are dipped in a flour batter, deep-fried , then coated with caramelized sugar syrup (toffee) and then finally sprinkled with sesame seeds. ‘Traffic-free lanes and beautiful views’: readers’ favourite UK family cycle routes

These idyllic routes take in nature reserves, a safari park, meandering rivers and coastal views, with plenty of pitstops for tired legs

In Swaledale, between Keld and Reeth, the Swale Trail is a stunning 12-mile cycle track that snakesalong the crystalline River Swale in the Yorkshire Dales. The terrain is manageable for rookie cyclists (that would be me rather than my husband and teenage kids) and there are plenty of stops along the way to have a cold drink and give the pedals a rest. The national park has upgraded the established routes, improving the surface for a less bumpy ride and there are reassuring Swale Trail signposts along the way. About three-quarters of the route is on unsurfaced tracks, the rest on nearly traffic-free lanes. Dales Bike Centre near Reeth is a good place to hire bikes, as is Stage 1 Cycles at Hawes.

It is a mildly spiced gravy that goes well with steamed rice and ghee. There are some variations of mulakootal, basically depending on the type of vegetable one uses in cooking it. There is keerai mulakootal made with lentils and spinach, there is pumpkin mulakootal made using pumpkin and vegetable mulakootal uses different types of vegetables. Spicy Soya Keema Masala Recipe

Keema is a South Asian meat dish that literally means minced meat in Turkish. Keema can be made with any meat but usually Keema is associated with mutton mince. Vegetarians Keemas usually involve peas or cauliflower. Most Keemas are minced meats that are mixed with aromatic spices that are either eaten by itself or added to rice or stuffed in breads.

Soya Keema Masala has basically minced soya granules cooked like Keema. Key to cooking this recipe is right timing for adding each ingredient and give it ample time to cook otherwise the raw taste of soya is going to spoil the whole dish.

It is very important to cover and cook the dish during the last few minutes. And when it comes to spices, you can always increase or decrease the amount as per your liking. You can also try adding some green peas just like the regular keema recipe.

Serve Soya Keema Masala Recipe along with Whole Wheat Laccha Paratha and Tomato Onion Cucumber Raita for a weekday meal.

Wild water: packrafting with the kids down Scotland’s River Tay

An 87-mile family paddling and camping adventure connects our writer with the Highlands landscape – especially when she takes an unexpected dip

Between the whirlpools of Campsie Linn on the River Tay in Perthshire and the village of Stanley, I raft down waterfalls of white into lakes laden with light. Then the river flows through twisting green corridors, wide beside walls of beech and birch trees before I have to begin paddling quickly. My heart beating fast, I head into the jaws of racing rapids, waves rearing towards me, swirling me high on to their peaks.

I’m packrafting the 117-mile-long Tay, Scotland’s longest and most powerful river, from source to sea, and this kind of excitement is par for the course. The river, which holds more water than the Thames and Severn combined, commences its journey in the west near Loch Lomond, before gliding east across the Highlands to Dundee, where it spills into the North Sea. However, we will end our journey in Perth, 87 miles from the start, because that’s where the river turns tidal.

Tell us about a great place in the UK to see migrating birds – you could win a holiday voucher

Share your best places to spot feathered visitors at this time of year. The top tip wins £200 towards a Sawday’s stay

Spring is a great time for viewing birdlife in the UK as the breeding season gets under way and summer visitors reach these shores. You may have witnessed the return of swallows, swifts and martins to their breeding sites from Africa, or heard the calls of newly arrived cuckoos. Perhaps you’ve seen an exhausted small bird, maybe a willow warbler, make it to our coasts after its arduous flight over the sea. And for sheer spectacle little can beat the sight of an osprey, just back from, say, Senegal or Ghana, diving for fish in a British lake.

Tell us about great places in the UK to see migrant birds this spring, whether it’s in a nature reserve, on a country walk, in your garden, or on a city street.

Severn steps to foraging heaven: a guided tour of the estuary’s edible plants

The convergence of sea and river habitats offers rich pickings, even with a motorway overhead. Our writer joins an expert forager

There’s something alluring, even slightly mystifying, about estuaries. The end of a river’s journey, it’s a collision of habitats where freshwater meets saltwater, and wooded riverbanks suddenly give way to cliffs, rocky shores, then mudflats, ridged and grooved like the surface of a brain. Wind whips up in all directions, stinging your cheeks with salt.

“When I’ve been down on the estuary for a few hours, I always feel invigorated, like I’ve had a good lungful of fresh air,” says Chloé Newcomb-Hodgetts, foraging guide and founder of Gourmet Gatherings, who offers private and group foraging tours. “It definitely helps me sleep better.”

Chloé has come to meet me at Beachley, a peninsula village on the banks of the Severn, and under the original Severn Bridge, on the England-Wales border. This particular foraging trip focuses on edible plants you can find along the estuary, a habitat often overlooked by those heading to the woods for nettles and wild garlic in spring.

A local’s guide to Helsinki, Finland: delicious seafood, islands to explore and a dash of Arctic cool

My favourite thing to do in Helsinki is get a fish plate from a stall in the authentically Finnish Kauppahalli (Old Market Hall) on the harbour front. Kinder Scout 90 years on: UK’s national parks still largely white and middle class

Right to roam only covers 8% of England and national parks remain inaccessible to people from working-class backgrounds

Ninety years ago, the Kinder Scout mass trespass took place, a protest on the highest point in the Peak District in which walkers mainly from Greater Manchester trespassed en masse calling for greater access to the moorlands.

The mass trespass was instrumental in leading to the passage of national parks legislation and helped pave the way for the establishment of Britain’s first long-distance footpath, the Pennine Way. But the dreams of those trespassers have still not been fulfilled. In 2000 the Countryside and Rights of Way Act established a partial right to roam in England and Wales, yet it covers just 8% of England, with the rest still privately owned and inaccessible to the public. This month the government quashed a review of the right to roam in England’s countryside. The environment minister Rebecca Pow says there are no plans to release results of the review, a decision condemned by campaigners. Speaking on Saturday at a memorial event in Hayfield, Caroline Lucas, the Green party MP for Brighton Pavilion, said the decision was “disappointing” and “frankly shameful”.

The historic event of the Kinder mass trespass parallels issues of access to the great outdoors that are now faced by people of colour and those from working-class backgrounds. The British countryside is demographically more white than cities, with a Natural England study showing that only 1% of visitors to national parks are from BAME backgrounds. A 2019 Defra landscapes review of national parks and areas of outstanding natural beauty (AONB) said: “It has felt as if national parks are an exclusive, mainly white, mainly middle‐class club.” The review proposed systemic reform of the governance of national park and AONB boards, stating that only a “tiny fraction” on such boards were of black, Asian or minority ethnicities. A research report by the Countryside Charity revealed the gulf between socially deprived areas and the countryside, highlighting issues such as poor public transport as barriers in access.

The Barrel Top, a shepherd’s hut in Devon, is surrounded by a flock of sheep that are now in lambing season. Guests are invited to muck in if they like. There’s plenty of nature to enjoy year-round as well, including a resident (albeit shy) otter, kingfishers, trout, mistle thrushes and wild geese, plus alpacas guarding the sheep. There are walks from the farm, and the market town of Modbury is just a mile away. You’ll be able to hear the sound of the river from the cabin, which comes equipped with a wood-burning stove while outside is a hot tub and a fire pit.

The best tapas bars and restaurants in Sanlúcar de Barrameda, Spain’s new capital of gastronomy

Six brilliant places to eat serving the Andalucían specialities in Spain’s latest foodie hotspot

Sanluqueños may have occasional cares and worries, but you wouldn’t know it. The mood in the seaside town of Sanlúcar de Barrameda, north of Cádiz, seems to be one of euphoria, of alegría. It probably has something to do with the sun and translucent light, and a lot to do with the local manzanilla sherry. The town, also known for a prized king prawn, the langostino de Sanlúcar, has been named Gastronomy Capital of Spain 2022.

This will come as no surprise to those who have long flocked to Sanlúcar for long, lazy weekend lunches. The town’s loveliness is also uplifting. At its heart is Plaza de Cabildo, with palms and a fountain encircled by restaurants with tables and umbrellas. Up a steep hill the Barrio Alto has churches (14th-century Nuestra Señora de la O is stark and mighty), old bars, small palaces with gardens, bodegas behind the white walls of former convents, and a sturdy castle – Castillo de Santiago. A short walk the other way are sandy beaches with moored dinghies, and the fish restaurants of Bajo de Guia, their tables along the beach of the Guadalquivir estuary offering views of fishing boats trailed by seagulls, and the bulbous ferry lumbering to the dunes and sandy wilds of the Unesco-listed Doñana reserve.

A great walk to a great pub: The Star, Bath

This beautiful stretch of the Cotswold Way serves up hillside views over Bath, and a pub little changed since the 18th century

While many pubs have adapted and modernised to stay afloat, Bath’s old Star Inn stays gloriously unchanged. There’s no food here except crisps and baps, no contemporary decor or fancy wine list; just local beers and jugs of draught Bass from barrels behind the bar, served in a series of little wood-panelled rooms and snugs where a fire burns in winter. The pub is built into one of Bath’s characteristic Georgian terraces, less than half a mile from the city centre’s sights, but just far enough to avoid crowds of visitors.

The smooth limestone facade, hung with flowering baskets and carriage lamps, is the glowing goal at the end of a spectacular afternoon’s walk along the Cotswold Way. This acorn-waymarked National Trail runs for 102 miles between Bath and Chipping Campden, through wooded wolds and caramel-stone villages. My plan is to get a bus up into the hills and walk the last few miles of the Cotswold Way back down into the city.

10 great places to see bluebells in the UK this spring – chosen by readers

As bluebells reach their peak across the UK, our tipsters tell us their favourite spots, ‘secret’ or otherwise, for viewing the astonishing woodland spring transformation

My favourite place to take in bluebells’ beauty and scent is Breamore Woods in Hampshire. The public footpath takes you through the main gates of Tudor Breamore House, past the house, stables and clock tower, then uphill through woodland carpeted with bluebells on both sides. As an added bonus, when you emerge from the trees after a mile or so, the view opens out over buttery yellow rape fields and distant farmland. At the very top of the hill is the strange, ancient turf Breamore Mizmaze. I take a turn round that, then it’s all downhill, back through the bluebells and perhaps a cup of tea at the cafe.

10 travel firms turning green: new initiatives to boost sustainability

Ahead of Earth Day on Friday, we pick operators taking action to help the planet and limit overtourism, with eco stays, fewer flights and support for local people

In a move designed to help counter overtourism, accommodation provider Sawday’s has announced that it will cap the number of places to stay it represents in some of the worst-affected areas. The B Corp-certified company, which includes the brands Sawday’s, Canopy & Stars and Paws & Stay, has identified 13 destinations in the UK and Europe experiencing overtourism. The initiative will effectively limit the company’s own capacity for growth in these at-risk areas, which include the Isle of Skye, Snowdonia, St Ives and the Lake District in the UK, and European hotspots such as Venice and Barcelona.

Beyond the Biennale: Venice’s ‘secret’ Sant’Elena island

While most of La Serenissima will be heaving with visitors during the art fair, which starts this week, this tiny island at the city’s eastern tip is a world apart

Venice welcomes back its prestigious Biennale, the art world’s oldest and biggest gathering, from 23 April, after a three-year absence. From that day, vaporetto no 1 water bus, which chugs up the Grand Canal and past Piazza San Marco, will be packed with art lovers, who will stream off at the Giardini boat stop for the Giardini della Biennale, where 30 international pavilions present the latest cutting-edge creations.

But one stop further, just before the vaporetto steams off across the lagoon to the Lido, is little-known Sant’Elena, a tiny island, separated just by a canal from the rest of the Castello district. Overlooked by most people, it’s an oasis of peace at a time when weekend city centre visitor numbers to the are topping 130,000, significantly more than before the pandemic.
