Shrimp and caddis patterns work best for fly fishing here. It’s rare to see rising trout in these town waters except during the mayfly season so time your fishing trip appropriately if it’s trout you’re after. The mayfly season is not exact but it tends to run between late May and early June here.

“Ten years ago I went to a lecture on Japanese seaweed. The expert was talking about the best place in Denmark to harvest seaweed – and it was Læsø. I’m so lucky it was Læsø,” says Ladefoged.

Walking up an appetite in Armenia’s Caucasus mountains

Neighbouring Georgia gets all the attention when it comes to Caucasus adventures and cuisine, but nothing beats the ‘primeval happiness’ of a post-walk feast in Armenia - and there are far fewer trekkers

It’s only a couple of miles up the trail opposite Noravank (new monastery), Armenia’s top tourist draw, but it’s a steep zigzagging slog, especially in summer. Thankfully, the view from the vantage point is more than worth it.

Only from a distance is it possible to really take in the masterwork of the red stone monastery complex, comprising churches and chapels, and to appreciate the sheer remoteness of the cinnamon-hued canyon it sits in, dotted with honeycomb caverns – “nests for bears” as a local priest later told me. And once you’ve reached the top and come back down, on the road leading to Noravank there is a small cave cafe offering respite in the form of refreshing salads, thick cool madzoon (similar to yoghurt), fresh lavash bread and fizzy bottles of Jermuk, the famous local mineral water.

Walking in solitude and sunshine in Sicily: a newly restored pilgrim’s trail

A path in the Madonie natural park once used by itinerant friars takes present-day hikers on mountain trails through a terrain rich in wildlife

Despite walking for three days, we’ve seen no one. Not a single hiker, dog walker or shepherd. Instead, golden eagles have circled lazily overhead, stags have boldly held our gaze, and rare blue butterflies have flitted around our booted feet. The silence here is deep and dense, broken only by birdsong.

This is the Madonie national park, also known as the Sicilian Alps, home to many of the island’s highest mountains and rarest plants. It’s a landscape of 200 million-year-old rocks, rich in fossils. Of raptors and the tiniest of songbirds. Of wild boar, fallow deer and porcupines. Of cyclamen and crocuses. Of the largest holly trees on the planet, and of 65 varieties of orchid. A landscape that is void of tourists, ramblers and Sicilians. For anyone in search of wilderness, solitude and sunshine, I can’t think of a better place.

I travelled 2,000 miles from Italy to the tip of Spain – on horseback

I had to brave wolves, bitter weather and mountain passes during my epic journey, but it was transformative

Before riding a horse across the Ligurian Alps in north-west Italy, I had never heard the phrase “in bocca al lupo” (into the wolf’s mouth). An idiom of good luck, in the same vein as saying “break a leg” to a performer, the words passed the lips of almost every stranger I met. As we travelled through these little-known mountains, the message began to take on a whole other meaning: a call to embrace the unknown, wolves and all.

I was on an ambitious journey – from Siena in Tuscany roughly 2,000 miles to the north-west tip of Spain at Finisterre, which literally means “the end of the earth”. I thought that a perfect place to finish. The idea came while working in London as a stable boy and (out of work) actor. Restless and desperate for a sense of purpose, I came across a copy of Don Quixote, Miguel de Cervantes’s 17th-century picaresque adventure. It lit my imagination and a quest began to take shape.

Driving north-east out of Madrid on the A2 motorway, the industrial sprawl seemed as never-ending as the roaring river of traffic. The change, when it came, was sudden and complete. After Peñarrubia the heavy traffic vanished, and with it the industrial estates and dull dormitory towns. We were now in Guadalajara, a province of Castilla-La Mancha which, with an average of just five inhabitants per square kilometre, has been described as “the largest demographic desert in Europe”.

The Spanish call places like this la España vaciada. The word for “empty” is vacío, but vaciada means “emptied”, as if there were something deliberate about the way the fabric of rural Spanish society has been worn threadbare by depopulation and underdevelopment.

Avoid the White Lotus effect: Thailand travel without the tourists

Thailand is no stranger to pop-culture fuelled overtourism. But behind the scenes there are islands, wild places and temples to explore

Much like the problems of the show’s deplorable characters, the White Lotus effect cannot be escaped. After writer-director Mike White’s second season of the black comedy was released, tourists flooded its Sicilian coastal setting of Taormina, and its luxe backdrop of the Four Seasons San Domenico Palace was booked out for six months straight post-filming.

The new season of The White Lotus is upon us, or rather it’s upon Thailand. Hundreds of thousands of tourists are expected to descend on the paradisiacal setting of Koh Samui, while cashed up guests at the island’s Four Seasons are already requesting upgrades to the $10,000 a night villas featured in the show. For a country that already struggles with overtourism, Thailand is bracing for impact. Local environmentalists are feeling uneasy, and quite rightly too – the Thai government closed Maya Bay on Koh Phi Phi for four years in 2018 after boat anchors and propellers, sunscreen contaminants and sewerage destroyed the corals and marine life off the white-sand bay after it went mainstream with 1999 movie The Beach.

For visitors in search of scenic walking routes, the province of North Holland is perhaps not an obvious choice. The landscape is famously as flat as the local pancakes and picturesque mountains, forests and waterfalls are in short supply.

Head into the countryside south of Amsterdam, however, and you can find lovely walking routes amid a quintessentially Dutch landscape of green fields, windmills and waterways. Walks along the Amstel River, which flows north into Amsterdam, also offer an opportunity to follow in famous footsteps. Rembrandt van Rijn lived for much of his life close to the river, was fond of walking its banks and produced some beautiful pictures here. With Amsterdam about to celebrate its 750th birthday in June, it’s a good moment to see the city from another angle, along the waterway which gave the city its name.

Where the art of Edvard Munch comes alive: a city break in Oslo

As a new exhibition celebrating the portraits of Edvard Munch opens at London’s National Portrait Gallery, we take a trip to the artist’s home city in Norway

I reach Ekeberg Park at sunset and walk along the muddy paths to find the viewpoint. The late winter sky is like a watercolour: soft blue and grey clouds layer together, with a sweeping gradient of yellow verging from tobacco stain to pale lemon above the distant, bruise-coloured hills. At the viewpoint, I look out over Oslo and listen for a scream.

In 1892, Edvard Munch took a walk in this same park as the sun was setting. Recording the experience in his diary, he wrote that he heard “a great and infinite scream through nature”. The experience became the basis of his most enduring painting.

“I felt like I was having two heart attacks at the same time,” the SBS World News host says, remembering his reaction. “Our saving grace was that we had booked the taxi, not hailed it. So we called the hotel, who contacted the taxi company, which radioed the driver, and he came back to the airport to reunite me with my bag.”

Come for the views, stay for the cheese and wine: spring in France’s Massif Central

With volcanic peaks, wild flowers and hot springs, the Cantal region is the perfect destination for a springtime road trip

Getting away from it all is surely the idea behind every holiday, yet as I drive through undulating countryside towards the village of Salers in France’s Massif Central, I wonder whether I’ve ever felt quite so away from everything.

This is the appeal of the Cantal, the rural heartland of the Auvergne-Rhône-Alpes region, in which the Massif Central is nestled. If you continue east from the Dordogne and Lot, you’ll discover a land of volcanic peaks, hot springs and welcoming auberges in one of France’s least populated departments. And, as I learn, it makes for a refreshingly different destination for a springtime road trip. The snow lingers on those peaks until early April, but I’m here in early May and the meadows abound in an extraordinary display of wildflowers, such as arnica, narcissi, orchids and myriad other species that thrive in that volcanic soil. The landscape is one of the most richly biodiverse in Europe.

In the Netherlands the Keukenhof near Lisse is well known for the beauty of its bulb fields in springtime. But if you are looking for a cycling holiday away from the crowds you’re better off heading 40 miles north to the Kop van Noord-Holland. Here you will find the largest contiguous bulb area in the country. April is the best time to cycle among the millions of colourful crocuses, daffodils, hyacinths and tulips. Between Schagen, Den Helder, Den Oever and Middenmeer you will find flower fields as far as the eye can see. I’d highly recommend the dune road from Callantsoog to Den Helder. The mostly well-paved surfaces are easy to cycle on and great for any fitness level.

This year’s seven candidates ranged from restaurants as far afield as Galicia in the north-west to Tenerife, Seville and Madrid. Most cook at intimate spaces with few tables, and offer ingredients and cooking techniques you would be hard-pushed to find on a British menu without breaking the bank.

Mangalorean Style Sonay Sukhe is a very important dish for every Mangalorean meal plate. The preparation starts by tempering the mustard seeds, curry leaves, onion and garlic which is called as “Sukka”. Cheesy Baked Ziti Pasta Recipe with Roasted Mushroom & Corn, is a baked pasta dish.  Ziti is a tube like pasta similar to that of penne, however siti has no ridges on the outer surface and the edges are cut flat at 180 degrees unlike penne which are angularly cut. 

This ziti pasta is par boiled and tossed in a freshly made red pasta sauce, along with some shredded mozzarella, spooned into a large baking dish or individual ramekins and baked with yet another layer of string chewy mozzarella and a sprinkle of dried herbs.
