Hay Gelato – Late Night Waffles & Gelato Cafe At Bedok Opens Till 2AM Daily

“Hey, there’s Hay in our gelato!”

By the folks behind Brine Restaurant at North Bridge Road is their new 18-seaters (10 indoors, 8 outdoors) gelato cafe at Bedok. (Also read: 10 NEW Gelato Cafes In Singapore)

This is just 2 doors away from Percolate Coffee and one street away from crowd-favourite FatCat Ice Cream Bar that serves artisanal ice cream flavours.

Using this outlet at Bedok as their R&D kitchen for flavours to introduce at Brine Restaurant, their interior is coloured in industrial grey on one side and a patterned pink wall on the other side to attract those who wants an Instagram shot.

A single scoop of gelato is priced at $4.20 whereas premium flavours will cost an additional $1 and waffles at $5.50.

A total of 12 flavours will be available at any one time, with interesting flavours such as Balsamic Strawberry, Truffle, Meyer Lemon, Yuzu Ginger and Smoked Hay.

I was surprised at how the gelatos were served.

Instead of being big and round, each scoop of Gelato is compressed to form a dent in the centre, be it in a cup or on top of waffles.

This is to allow the staff to add complimentary toppings to pair with the gelato flavours.

I didn’t expect myself to “eat grass” when I ordered the Smoked Hay ($5.20 for premium flavour), supposedly their signature flavour at Brine Restaurant.

Made by smoking real hay (plants or grass dried and stored as animal fodder or food) and infusing into their milk-based gelato, the Smoked Hay gelato was dented in the centre with cocoa nibs on top.

The gelato was smooth and milky, with distinctive smokey-ness that lingers in the mouth without the grassy flavours of hay, whereas the coca nibs add some crunch to it, making it more robust and earthy.

As a matcha-holic, the Uji Matcha was calling out to me with its intense shade of green that is irresistible.

Topped with desiccated coconuts, the matcha taste was intense with a distinct vegetal notes that matchaholic will enjoy.

I was looking forward to their Waffle ($5.50) as the service crew interestingly poured the batter into a vertical standing waffle maker instead of a usual waffle pan.

Even though the waffle turned out to be golden brown and crispy on the outside, fluffy on the inside, it was a tad too salty which interfered with the gelato flavours.

2 plated desserts ($8) from Brine Restaurant are being served here, namely Smoked Hay Gelato with chocolate textures & miso caramel and Laksa Leaf Cream with coconut gelato and kaffir lime meringue.

I had the Laksa Leaf Cream with coconut gelato and kaffir lime meringue ($8) served with shrimp floss.

Taste-wise, the flavours were on the subtle side without any distinguishing flavours, which seems to mimic our local favourite laksa, in the form of a cold dessert.
