Pressure Cooker Ayam Pongteh/ Nyonya Chicken Stew 娘惹豆酱焖鸡【高压锅食谱】



Nyonya chicken stew with potatoes aka Ayam Pongteh is a Melaka dish cooked in fermented soybean sauce, added gula Melaka for the sweetness and aroma. 

In this blog post, I'm sharing a simplified recipe cooked using Ninja Foodi, which able to bake the potatoes with minimal oil used compared to pan-frying/ deep-frying, saute ingredients and pressure cook the chicken together with rice. Ingredients:

360g Chicken 

1 tsp Corn Flour

1 tbsp Oyster Sauce 

1/2 tbsp Dark Soy Sauce 

2 Potato (peel and cut into chunks) 

9 cloves Garlic (minced) 

1 Onion (minced) 

25g Soy Bean Paste 

1 small cube of Gula Melaka 

3 large Shiitake Mushroom (cut into chunks) 

Some Water and Cooking Oil

Method:

1. Marinate chicken with corn flour, oyster sauce and dark soy sauce.




2. Lightly coat potatoes with some oil, bake in Ninja Foodi 210'C for 5 minutes. Remove the potatoes from the pot, set aside. 



3. Select Sear/Saute mode, heat oil and fry the onion and garlic till fragrant, add in mushrooms and continue to stir fry for a minute.


4. Add in the rest of the ingredients.


5. If cooking with rice, use the reversible rack and place the rice on top. Rice and water ratio is 2:3.





6. Pressure cook in Ninja Foodi on high for 3 minutes, natural pressure release 10 minutes.
