I was happy that these easy peasy brownies managed to get a crackling shell on top, even though they didn’t rise (obviously, given there was no yeast present). However, the refrigeration after is quite important, as the inside was still slightly wet.
But once they’ve been chilled for an hour, they’re good to enjoy, and might I just add, these have proven to be quite a healthy version of brownies as well? With minimal sugar, all the sweetness will come from the ripe bananas and cocoa powder—especially if you used sweetened cocoa powder.
Also, if you use a baking tray or baking dish that’s slightly smaller, you’ll be able to get thicker brownies, as the baking tray I used was about 40cm.
If you’re unable to find baking cocoa powder, you can always substitute it with cocoa powder that’s made for drinking, like malt-based powder such as MILO or Horlicks if that’s what you already have on-hand.
