A simple and delicious homely dish, usually cooked over stove-top for few hours. I've simplified the cooking method by using pressure cook method, cook the rice and braised pork at the same time, only 10 minutes cooking time plus 20 minutes natural pressure release, the meat turned out tender and flavourful, gravy is thick and tasty.
The Ninja Foodi multi cooker that I'm using is a combination of pressure cooker and air fryer in one pot, it's super efficient and time saving. Besides pressure cook and air frying, there are other functions such as steam, slow cook, sear/ saute, bake/ roast, grill and keep warm.
Ingredients:
700g Pork Belly/ Twee Bak 猪肉 700克
8 slices Ginger 姜 8片
8-10 Shiitake Mushrooms 香菇/冬菇 8-10片
(A)
2 tsp Sesame Oil 麻油 2小匙
3 tsp Tapioca Flour 木薯粉 3小匙
12 cloves Garlic, chopped 蒜头 12瓣 剁碎
7 Shallot 小葱头 7粒 剁碎
Sauce:
110g Rice Wine 米酒 110克
100g Light Soy Sauce 酱油 100克
20g Dark Soy Sauce 黑酱油 20克
60g Rock Sugar 冰糖 60克
1tsp Chinese Five Spice Powder 五香粉 1小匙
1 tsp White Pepper 胡椒粉 1小匙
1 Cinnamon Stick 肉桂棒 1条
1 Star Anise 八角 1粒
Optional:
1 1/2 cup Rice 米 1 1/2杯
1 1/2 + 3/4 cup Water 水 1 1/2 + 3/4 杯
