Perhaps you may remember “Hattendo”, the once-trending Japanese cream buns which had long queues outside its café at Tanjong Pagar Centre.
That café may have closed, but they have returned with a brand new “PIPES by Hattendo” concept at Dorsett Residences, very near Outram MRT Station. (This was where Roosevelt’s Diner & Bar used to be.)
Instead of just buns, PIPES has a wider menu and Japanese food served.
During the day there is a Japanese-fusion menu along with the signature cream buns; while night time customers can expect chef’s speciality dishes.
The lunch time menu includes a variety of items such as Tamago Sand ($13) of egg mayo sandwich with sausage and green salad, Teriyaki Pork Chop Don ($14), Roast Bee Don ($18), Una Don ($25), Roast Beef Sourdough Toast ($14), to Spanish Pork Belly Burger ($8).
During dinner time, you can even go for a Sashimi Platter ($36) with chutoru sourced from nearby ex-neighbour Kuro Maguro.
If you have never had a Hattendo before, there are five flavours to choose from, from Custard, Whipped Cream, Azuki (sweet red bean paste), Matcha and Chocolate. The most popular flavours are the Custard and Fresh Cream.
The cold cream bun by Hattendo would look unsuspectingly simple, like a plain white round dough smaller than a fist.
Although this would remind some of a choux puff, the layer of fluffiness was “not a puff”, but had a bread-cake texture, soft like an expensive good quality pillow. (They do have occasional seasonal choux pastries though).
Beyond the soft outer layer was tantalising smooth fresh cream.
The inside was cold, smooth and mellow, in the right proportion of sweetness and viscosity.
The Azuki fillings is usually my favourite, made with Hokkaido-grown qualified Azuki sweet beans, simmered carefully for a pleasing flavour.
Other than the Cream Buns, also available are Custard Cream Pudding ($3.50), and Matcha Cream Pudding ($3.80) with Shizuoka matcha flavour.
While they are termed as “pudding”, the texture was closer to a rich mousse in which you would dig in with a spoon and savour.
Another recommended dessert was the Pipes Tiramisu ($8) enhanced with Kahlua coffee liqueur.
While the alcoholic component was that not strong, you may appreciate the rich and strong coffee taste – which is unlike the typical Japanese desserts usually light and delicate.
An interesting aspect is the showroom for “NOVO MARK II”, which boasts of a fully automated coffee roaster from Kyoto Japan.
Customers can choose specialty coffee beans sourced from around the world, and have them roasted on the spot to their desired roasting degree.
The ground house blend roast is also used in the making of their Hokkaido Soft Serve ($6.50), with a blend of 100% fresh Hokkaido milk and espresso. Not bad.
