Simple Stay-home Recipes: Easy-peasy Microwave Mug Omurice

Japanese cuisine is absolute comfort food at its best. With a fluffy egg omelette covering a bed of savoury ketchup flavoured chicken fried centre, the omurice is a beloved staple in Japanese cooking and a dish that I am very much infatuated with.

We know we have previously walked you through an omurice recipe, but this time, let’s take things up a notch and give our recipe a spin with an easy microwaveable recipe.

Even without the need for frying pans, you can be your own chef too! Here’s the only Easy-peasy Microwave Mug Omurice recipe you’ll want to keep for all your future omurice cravings.


Ingredients

Microwave Omurice Ingredient
  • 50g chicken, diced
  • 1/8 onion, chopped
  • 2 tbsp mixed vegetables
  • 3 tbsp ketchup
  • 1 tbsp butter
  • 1 egg
  • 1/2 cup Japanese rice, washed
  • 1/2 cup water
  • A pinch of salt
  • A pinch of pepper

Tools

  • Cup
  • Whisk
  • Cling wrap
  • Microwave

Recipe Preparation

Preparation time: 10 minutes; Cooking time: 12 minutes
Feeds one

  • Dice chicken into small cubes. Finely chop and dice onions. Rinse and wash Japanese rice.
  • In a cup, add in Japanese rice, diced chicken, onions, mixed vegetables, ketchup, butter, water, salt and pepper.
  • Give the cup a good mix around so the ingredients are well-combined.
  • Crumple a sheet of parchment paper and lay it on the surface of the cup.
  • Loosely cover the cup with a cling wrap.
  • Microwave for 3 minutes at 600 watts. Carefully open the cling wrap and give it a quick mix.
  • Cover and microwave again, this time, at 200 watts for 14 minutes.
  • Carefully peel off the plastic wrap and parchment paper and whisk in one egg and pour it over the top and microwave it for 2 minutes.
  • Serve with a spoon of ketchup and garnish with some peas (optional).

While this was no way comparable to those served in restaurants, I would say it was nevertheless, utterly delicious.

The dish was overall quite enjoyable, with light and fluffy-soft eggs and tender chicken chunks. The omelette was firmer in texture as compared to the lava-styled ones, though. While the tomato paste may seem like an insignificant addition just to fill the plate, it added depth and flavour to the dish with its vibrant red colour and savoury sweet taste.

The onions helped to elevate the flavour of the dish, balancing out the sweetness of the ketchup with plenty of umami. The best part—the flavours were light on the palate and it didn’t wear my appetite down after a few spoonfuls.
