Your go-to ingredients? Recipe ideas? Talk to me!

I've been making my own Thai(-inspired) dishes at home for a several months, and I'm hooked. My city (Evansville, Indiana) has a couple of Asian / international grocery stores, and between the two there is a fairly wide selection of Thai ingredients (as well as canned curry pastes, pad Thai kits, etc), though I haven't been able to find some produce (kaffir lime leaves, holy basil, galangal). What recommendations do you have for these staples?

- coconut oil
- coconut milk / cream
- fish sauce

My favorite things to make so far have been yellow chicken curry with potatoes (which even my wife and son love to eat!), larb (with ground pork, mint and cilantro), a red curry with sweet potatoes, onions, bell peppers, and peanuts, and pad Thai (from a kit, though it's quick to make and isn't bad). I also have a tom kha soup base that's OK, though the Thai restaurant's is (of course) much better. I've found an Instant Pot recipe for sticky rice that works really well, though it only makes enough for one serving at a time.

I'm open to other suggestions as well!
