The legendary Fatty Cheong stall at ABC Brickworks Food Centre serves a selection of Chinese fare, including roasted and barbecued meats.
This is known in the foodie circles as one of the best char siew hawkers in Singapore.
(Note: ABC Brickworks Food Centre is finally reopening on 16 June 2020 Tuesday according to NEA website as there were delays in its revamping works due to the “Circuit Breaker”.
However, not all stalls are likely to open on the 16th as cleaning has to be done, or hawkers need more time for preparations.
On its menu are Char Siew Rice ($4.00), Roasted Duck Rice ($4.00), Roasted Duck Leg Rice ($6.00), Pork Ribs Rice ($4.00), and Roast Pork Sio Bak Rice ($3.50).
If your preference is noodles, the basic Wanton Noodles starts from $3.50. The noodles are the QQ springy type, though the wantons are more average.
Roasting is done the traditional way over charcoals.
Its sweet and succulent char siew is a must try. You should get thick, generous cuts with charred bits. Swirl it into the sweet sauce for tasty bite.
The tender ”bu jian tian” underarm cut is used, with a good lean meat-fat ratio to maintain its juiciness during roasting. However, some customers may find the meat slightly tough.
(“Bu jian tian” char siew 不见天叉烧 is literally ‘roast pork that doesn’t see the sky’. That is because the meat is taken from the arm pit of the pig, thereby being more tender than the other parts.)
The fats help in creating an essential component – the char on the outer layer.
The marinade is a blend of oyster sauce, bean paste, soya sauce, sugar, rice wine, black soya sauce and some red colouring to brighten it up.
Soaking the meat overnight gives it a boost of flavour, with the sugars helping in the caramelisation process. Basting while roasting keeps it juicy until the right degree of char is achieved.
For those who want to head straight for the char siew noodles, there is actually another Fatty Cheong Wanton Noodles stall (#01-52) located at the back of the food centre. That generally has a shorter line.
