Fu Shun Jin Ji Shao La Mian Jia 福顺烧腊面家 – Affordable Roast Pork Rice & Noodles From $3, Long Queue At Maxwell Food Centre

In Maxwell Food Centre, this is one of the stalls with long queue even before its official opening hours at noon, and the go-to place when it comes to exceptional roasts.

Fu Shun Jin Ji Shao La Mian Jia 福顺烧腊面家 was established in 2008 by Singaporean Chan Tuck Kwai, who first began cooking in his teens.

His roast meats have become popular they attracted constant queues of diners. Waiting time can be 30 minutes at least during peak hours.

You are bound to find endless options of Cantonese roast stalls in Singapore. But then, not many can specialise in all three kind of roasts: roast duck, roast pork belly (siu yok), and barbecued pork (char siu) all at inexpensive pricing.

On its menu are Wanton Noodles, Dumpling Noodles, Mixed Meat Noodles, Duck Noodles, Roast Duck Rice and Roast Meat Rice.

The long line is not without reason, as most of the plates start from $3. And look at the portion given.

If not, order the 3-roast combo for maximum indulgence. The plate comes juicy, crisp-skinned roast duck and tender thick-sliced pork, both Char Siew and Sio Bak having strips of fat for succulence.

The affordably-priced Char Siew Wanton Noodles ($3, $4) is where you get the same tender char siew and egg noodles that blends well with the sauce.

Its Char Siew is prepared by roasting it over charcoals while basting continuously throughout the cooking period.

This technique layers the surface with a thick coating of marinade, not-too-sweet and deeply savoury. It is roasted until a slight charring is created, which added a smoky flavour to the strip of meat.

Aside from imparting a smoky aroma, the charred & crispy bits on the char siew adds character to the meat.

For variety, they offer both lean and fatty cuts. You may be surprised even the lean cuts are roasted to the right level of tenderness, without getting dry and tough.
