Picanha with bean salad

Picanha is also known as the top sirloin cap or the rump cap. Popular in the US and Brazil, it’s a pointed cut, so is great for serving a crowd as you’ll get well done to rare from the same piece of beef.

Coxhina means 'little thigh' in Brazilian, after the meat they're filled with. They make a great street food-inspired snack.

Salpicoa Brazilian salad

Salpicoa is a typical salad from Brazil, which is quite similar to a waldorf. It might seem strange topping a salad with fries but it really works here.

Moqueca is a traditional Brazilian fish and coconut stew – this version uses shellfish. Palm oil is often used in Brazilian cooking – look for sustainable organic palm oil to reduce the impact on wildlife and the environment, or leave it out if you prefer.
