Easy Ecuadorian recipes

Ingredients
- We use aji chillies, limes, plantain and more
Popcorn ceviche
Check out this quick and easy ceviche recipe. Ecuadorian ceviche is beautifully silky and smooth, and has more a soupy consistency than a Peruvian ceviche. The topping is the real surprise though – salted popcorn. It adds extra seasoning for the fish and a light crunch.
Pulled pork hornado
This is a wonderful Ecuadorian-inspired pork dish, roasted in beer and spices, until soft and tender. The meat has a lovely fragrance and zesty pop from lime juice. Try it stuffed into a roll and served with a crunchy salad, or over rice with aji chilli sauce. If it's pulled pork you're after, we have lots more recipes.

Encocado Ecuadorian stew
This simple dish of fish in a creamy coconut sauce is cooked all along the coast of Ecuador and on the Galápagos Islands. The sauce is flavoured with a red spice called achiote, which is mellow in flavour but full of colour. Here, it's substituted for paprika, which works just as well and is much easier to get in the UK.
Dulce de leche cheesecake
Check out this creamy swirl cheesecake recipe with dulce de leche, inspired by cookery writer John Gregory-Smith's trip to Ecuador. This easy no-bake cheesecake is an indulgent and impressive dessert to serve to friends and family at your next dinner party. We have plenty more great cheesecake ideas where this came from.
