I have the most amazing, authentic Thai restaurant in my city. They have a dish called Goong/Gai Pad Prig Phao which is either shrimp or chicken in “a special chili sauce with cashews.” I cannot seem to find anything similar on the internet. It’s a thick red sauce that’s both sweet and spicy. To die for. Not sure if that restaurant will be open much longer so I’d love to have a recipe to replicate :)
